Sooooo…THIS was delicious!! Sautéed shrimp with ginger, coriander and coconut oil.
You’ll need:
- 2-3 tbsp coconut oil
- a small batch of green onions (white parts chopped, green parts chopped and set aside)
- 1 tbsp minced ginger
- 1 tbsp fresh garlic
- 1 tsp dried coriander
- salt and pepper to taste
- juice from 1/2 lemon
- 1 pat of grass-fed butter or ghee
- 1 lb of wild caught shrimp, no shells.
In large fry pan:
- heat coconut oil over med heat
- add white onion pieces, ginger and garlic and sauté few mins until fragrant
- then add coriander and sauté an additional minute
- add your shrimp and cook on both side until opaque – approximately 2-3 minutes
- add a pat of grass-fed butter or ghee and the green parts of the onion and sauté until wilted, 15- 30 seconds
- lastly, season with fresh squeezed lemon juice 🍋 and salt and pepper to taste.
Serve as an appetizer or side dish. Or serve as your main course with a simple arugula salad on the side.
For the arugula salad, mix together:
- 2 tbsp fresh lemon juice
- 1/4 cup EV olive oil
- salt and pepper to taste
- drizzle over fresh arugula (about 4 cups)
- add fresh shaved Parmesan cheese (Italian imported) and toasted walnuts
