Sooooo…THIS was delicious!! Sautéed shrimp with ginger, coriander and coconut oil.

 

You’ll need:
  • 2-3 tbsp coconut oil
  • a small batch of green onions (white parts chopped, green parts chopped and set aside)
  • 1 tbsp minced ginger
  • 1 tbsp fresh garlic
  • 1 tsp dried coriander
  • salt and pepper to taste
  • juice from 1/2 lemon
  • 1 pat of grass-fed butter or ghee
  • 1 lb of wild caught shrimp, no shells.
In large fry pan:
  • heat coconut oil over med heat
  • add white onion pieces, ginger and garlic and sauté few mins until fragrant
  • then add coriander and sauté an additional minute
  • add your shrimp and cook on both side until opaque – approximately 2-3 minutes
  • add a pat of grass-fed butter or ghee and the green parts of the onion and sauté until wilted, 15- 30 seconds
  • lastly, season with fresh squeezed lemon juice 🍋 and salt and pepper to taste.
Serve as an appetizer or side dish. Or serve as your main course with a simple arugula salad on the side.

 

For the arugula salad, mix together:
  • 2 tbsp fresh lemon juice
  • 1/4 cup EV olive oil
  • salt and pepper to taste
  • drizzle over fresh arugula (about 4 cups)
  • add fresh shaved Parmesan cheese (Italian imported) and toasted walnuts
