My Story

Diet coke and peanut butter.

My fridge staples for the bulk of my adult life. I didn’t “do” cooking, let alone kitchens. The kitchen was merely a room in my home for aesthetic purposes and storing wine glasses. Take-out, Earls and sushi were my jam.

Why Karli’s Kitch

I created this blog for the purposes of sharing and helping. And to be totally honest, to ease my guilty conscience. I promised too many friends that I would share recipes and tips but between fatigue, brain fog and two busy, needy kids, I dropped the ball.

But seriously. Ever since I started “the diet”, not only are more and more people popping up with auto-immune issues/disease, or just other health concerns, and wanting to know what has worked for me (and thousands of others for that matter), but I’ve also had so many friends ask for recipes who are interested in the “clean eating” aspect of this diet, whether it’s for weight-loss or just wanting to eat healthier without sacrificing flavor or eating stupid palm-sized portions that leave you perpetually hungry.
